Surprisingly you are not the only one who played this game a lot  The popularity of this game led to a lot of unassisted and assisted speedruns, lots of discovered tricks and glitches and masses of unnecessary new Ocarina of Time threads both at SDA and tasvideos.
In case you want to make a run of OoT consider taking a look at the 225 pages thread at SDA and the 191 pages thread at tasvideos. They contain the common known tricks and knowledge of the game. There actually exists a page at tasvideos, which has a collection of info about OoT, but actually only contains a fraction of tricks most speedrunners of OoT already know.
My knowledge about the game is limited, but the current methods to overcome gravity usually involve using bombs and backward jumps or hoverboots.
Also worth mentioning is the "Reverse Bottle Adventure Glitch", which allows the player to change certain items into others (thus getting the medallions and skipping some dungeons).
I'm sorry, if this doesn't sound very motivating, but I just want to prevent the case, that you put yourself through a lot of work, which can't be accepted due to the lack of tricks used in the run.
If you do however already know the common tricks and this is a new unknown flying technique, this sounds like a great idea, which I am looking forward to. Consider exchanging info with other forums (like SDA and tasvideos), too.
